I didn't use dijon mustard, just another random mustard, and it was still delicious. For tomatoes, I actually added sundried that have oil with them, and it definitely made the flavor stand out a little better. I also added peas, which made it even more delicious. With this recipe, you can basically add anything, and it'll still taste good, so I like it a lot. It's also really easy to make, which is a ginormous plus. I didn't put chickpeas in it, though, hence the peas.
