sorry for the bad photo - but this was amazing! i used chicken stock instead and that was a good fit for me. i recommend salting your oyster mushrooms and leaving them in a bowl to draw out water prior to frying them & avoid using too many stems - they are too dense and juicy so they don’t fry as well as the fan part of the mushroom. i actually think i should have bought more oyster mushrooms to fry just because i loved them so much. i went with cremini mushrooms instead of chestnuts based on store availability and that worked just fine. absolutely 10/10! excited to try more of Alfie’s recipes. :)
