Tried this in a pinch because grocery stocks were low. It's now a favourite. Amazing flavours and so heartwarming. Added chicken slices for extra protein. It keeps very well in the fridge, almost gains more flavour.
The parmesan rind makes all the difference. I keep a load in the freezer as they keep for a year.
