I'm trying to figure out the world of sourdough, and this was the first recipe that seemed easy enough to try. It needs as much discard (100 g) as I normally remove per day. Just need to mix discard, flour and water for 6-12 hours, add the rest of the ingredients in the morning and bake. My husband is suspicious of my "alternative" muffins, but he loved this. I used coconut sugar and coconut oil. Maybe next time I'd use avocado oil so it has no taste. I got 15 muffins from 1/4 cup dough each.
