Update: I increased the lentils to 1 cup. This small change adjusted the stew consistency to perfection!! I did not reduce the liquid. I left the lid off for more of the cook time and watched for the stew to boil down by almost 1/3 before putting the lid back on to prevent further evaporation. Delicious and no longer soupy.
