I used white man's taco seasoning on the chicken, really brought it to life. Mixed all of the filling together in a big bowl, added a ton of cheese, and black beans.
In the over I covered it for the first half of the bake, and thank God I did. It was a little dry when it came out.
Melted cheese and parsley on top at the end. Delish!
