Baked Chicken Chimichangas
Baked Chicken Chimichangas are a healthier twist on the old Mexican classic chimichanga recipe.

Ingredients
6 servings

2 cupschicken
cooked, chopped or shredded

1 cupsalsa

1 teaspoonground cumin

½ teaspoondried oregano leaves
crushed

1 cupshredded cheddar cheese

¼ cupgreen onions
chopped

68 inch flour tortillas

2 tablespoonbutter
melted
Diced tomato
Instructions
Step 1
Preheat oven to 400°F.

Step 2
Mix chicken, salsa, cumin, oregano, cheese and onions. Place about 1/3 cup of the chicken mixture in the center of each tortilla.







Step 3
Fold opposite sides over filling. Roll up from bottom and place seam-side down on a baking sheet.

Step 4
Brush with melted butter. Bake at 400°F for 25 minutes or until golden brown and crispy.


Step 5
Garnish with desired toppings and serve with salsa on the side.

This recipe is so simple and really cheap to make. I cooked the chicken in the slow cooker for the day and mixed everything when it was dinner time. They were nice and crispy on the outside and moist on the inside. I topped mine with a little sour cream and lime hot sauce.
