I actually made this for dinner. My family liked it. The changes that I made was that my daughter in law can't eat bell peppers, so I just eliminated them, but I made the meat mixture with the black beans, as the rec I pe calls for, and I added a can of corn into it. I served it with salsa and sour cream on top. We all enjoyed it and it was only 23 carbs for a quarter of the recipe ! It was very filling too. There was still a serving left and my son took it for lunch today. We've added it to our bi-weekly meal plan.
