Definitely took me more like 2 hours with all the chopping, but is overall an easy recipe!
Used no-chicken broth, love the bay so i added a little more at the end. It was a little sweet (guessing bc of sweet potato and coconut milk) though not in a bad way at all! But to balance it I added some acid in the form of a bit of lemon juice and a small splash of soy sauce.
I do think you could maybe add more flavor by browning the mushrooms separately first, will try next time! But I will say throwing most everything in at one stage was easier/faster and still tasty.
