I used
3 garlic cloves, minced
Extra virgin olive oil
1/2 cup vegetable broth
2 15-ounce cans butter beans, drained
1 cup cherry tomatoes, halved
Kosher salt and black pepper
1 teaspoon paprika
½ teaspoon garlic powder
Italian seasoning
Red pepper flakes to taste
2 Tbps chive cream cheese
1 cup chopped fresh parsley
1/3 cup shaved Parmesan cheese
Juice of half a lemon
THIS WAS SO GOOD
It was perfect to use up what I had in the fridge I served it with a side of crispy air fryer potatoes
You can use any veggies you have in the fridge next time I’ll try with toasted sourdough !
