Crepes can be a little tricky, however, they can also be troubleshooted. Was the pan VERY hot? Did you make the mistake of trying to use oil or butter or "non-stick" spray? Was it an 8 inch pan OR LESS? Did you use 1/4 cup of dough PER crepe? Did you rotate and roll the pan so the dough was not thick in some places and thin in others? Did you wait until it was no longer runny 1 inch in from the edge ALL THE WAY AROUND? When you slipped the pancake turner, or spatula, under the edge did you continue to slide it around the crepe edge until it was all loose from the pan before flipping? Did it cook too long, or not long enough, on the second side? If it was none of these we need to discuss the quality of your ingredients. Or perhaps the way the dough is made, but that would be last ditch. Hope this helps! Happy crepe making!
