A quick and easy, Christmassy cupcake recipe.
It's light in flavour,and the whole family enjoyed them.
This makes 12 cupcakes if you're generous in the filling of the cupcake wells, or probably about 16 if you follow instructions and fill 2/3 full.
The frosting/icing is delicious, but very stiff. It didn't want to be piped through a star nozzle, even after adding a little bit of milk.
