Really good! This is definitely going in the regular rotation. Based on what was in my kitchen, I made some subs. I used smoked paprika and I think it was a good call. I subbed yellow split peas for moong lentils, and they could have used a couple more minutes of pressure, but were edible (the red lentils cooked fine in this time). I used frozen onion and spinach and canned diced tomatoes. In the tempering I used cayenne and subbed 2 tsp red pepper flakes for dried chilies. I might crank up the heat a little more next time. Be careful with the boil on saute step or you'll have lentils stuck to your insert. Consider doubling for leftovers.
