I love these, and people say they are "gourmet!" I used homegrown pumpkin and had to squeeze a lot of liquid out. Squeezing the liquid out is key to chewy cookies.
A clean tea towel worked better than paper towels.
I made a double batch and froze some. When I want to cook them, I take them out ahead of time to thaw.
