To gage how much cheese sauce you will need before baking requires knowing your potatoes. A dry, mealy potato will need double the sauce that a waxy potato will need. Since you are pre-cooking the potatoes any way, notice which kind they are and adjust the amount of sauce. It will take practice, but keep trying!
