Biiiig hit. I made it with breakfast sausages and did not add sage and parsley, and it tasted amazing. I made my own dough from the suggested recipe. It wasn't that clear how to do it for this meal, but after making the dough (with quick-rise instant yeast) I left it in the fridge overnight, then made the knots and mixed it with the "sauce", left it in the fridge overnight again (barely grew), and then baked it for 25 mins. Turned out fantastic.
