Soooooo good, the whole family liked it. I did change some things up and added some ingredients from the recommendations of people in the comments. First I used rotisserie chicken and cooked it on the stove top. I doubled the recipe but only used one can of beans and I used pinto beans instead of black. I used a 28oz can of mild Rotel instead of 2 10oz cans (sensitive to spice). I added 2-3 cups of water and 2 chicken bullion cubes. We added sour cream, fiesta cheese blend, and either Fritos or tortilla chips to our individual bowls. It still has a little spice to it but totally tolerable and for reference to much black pepper is pretty spicy for me.
