Easy Crock Pot Cream Cheese Chicken Chili

So yummy! Will be on our winter rotation!

This is easy but feels like it’s missing some nutrients. I added onions and in the future I would add broccoli and maybe even rice.

Turned out great. Would not change anything.

Doubled the recipe for an office potluck...mostly chicken, maybe double everything but the chicken next time...

Delicious! Was low on time so I did the instant pot for 30 minutes. Served it over rice! Definitely making it again

Pretty good. Does not need 6-8 hours in the crock pot at all. It was ready in under three hours on low.

This chicken soup was fabulous! I added smoked paprika for a little kick.

I would add chicken broth to thin it out a little bit more, but that also could be from me taking out the can of Rotel since I’m not a tomato fan…basically take my advice with a pinch of salt. Otherwise this goes great with a dash of hot sauce and some tortilla strips 😋

OMG! This was sooooo good! I was pressed for time so I made it in the Instant Pot on high for 15 mins.

I made it exactly as the recipe said. It comes out very bland to me, but it's ok. I'll make it again but definitely add some things to it.

Soooooo good, the whole family liked it. I did change some things up and added some ingredients from the recommendations of people in the comments. First I used rotisserie chicken and cooked it on the stove top. I doubled the recipe but only used one can of beans and I used pinto beans instead of black. I used a 28oz can of mild Rotel instead of 2 10oz cans (sensitive to spice). I added 2-3 cups of water and 2 chicken bullion cubes. We added sour cream, fiesta cheese blend, and either Fritos or tortilla chips to our individual bowls. It still has a little spice to it but totally tolerable and for reference to much black pepper is pretty spicy for me.

My whole family enjoyed this recipe. I added chicken broth to thin it out. So yummy!

I made it without the crock pot by air drying the chicken while cooking the rest of the ingredients in a pot on the stove

Double the recipe for sure but not the beans. Too many beans (for us). I was in a hurry and did all this on the stove. Was ready in 20 minutes! I used chicken that was already cooked though so keep that in mind.

It was delicious. Will double up on the spices next time, add more chicken, maybe double the recipe ingredients.

Added can of green chilis, swapped 1/2 fresh onion, added 2 tbsp chicken bullion, used fire roasted tomatoes and small can tomato sauce

I made this in the pressure cooker. Used chopped tomatoes and one can pinto beans and one can kidney beans

Very easy! Didn’t have ranch dressing mix so I used a can of enchilada sauce instead - only used 4 oz of cream cheese - came out tasty and with just the right amount of “sauce” Cooked on low for 4 hours - chicken was still moist. Will make again

I used less than half the amount of cream cheese and substituted my own seasoning instead of ranch packet.

I used some Doritos to dip in my leftovers the next day!

Substitute chili beans and add navy beans. Substitute diced tomatoes and add chilis. Add chicken broth.

I added diced green chiles and it was perfect!

Don't drain the beans fully if not adding tomatoes

Overall good, but could use a little bit more spice. Made it for a chili cook-off, and didn't win, but it did get all eaten up!

This was delicious! Spicier than expected and didn't end up very soup like, but still delicious. May add a bit of chicken broth next time to thin it out a bit. Ate it with fritos scoops! Will definitely make again!

So tasty and filling! I swapped the regular ranch seasoning for spicy ranch which gave it an extra kick.

I made with every ingredient the same except for the black beans. I interchanged them with the white kidney beans. It’s not very spicy. It was much better with sour cream and cheese topped

Great, easy dish. I didn't have corn so I used green chiles instead. I did add some salt and heavy cream but otherwise followed the directions 100%. It was delicious.

I used two ranch packets, garlic powder and some chicken broth to make extra sauce. AMAZING!!! Will be a fall and winter go to.

Super easy to make and tasted great! Cooked on low for 6 hours. The chicken was very easy to shred. I used 3 chicken breasts instead of 2, and I waited to add the cream cheese until the last 30 minutes of cooking.

Made this but i forgot to add salt for seasoning. It was a bit spicy for me but it is definitely wet, moist isn't the word for it lol

I added some vegetable stock because I didn't have chicken stock to cut down on the thickness to make it a little more chiliesque than a dip.

3 chicken breasts instead of 2

I want to try it but I can't have any tomatoes or anything with kick, any suggestions?

I'm always leery of cooking chicken on high in the crockpot, so I started this too late one day and it just had to be put in a container and refrigerated. Had a bowl the next day, over basmati rice, and man, this will be in the rotation fairly regularly. Easy to put together, just need to shred the chicken when it's cooked. (More chili powder may have made its way in the crockpot than called for, but to each their own. Also used Rotel diced tomatoes and green chilies.) It wasn't bad at all, but I may experiment with doing something to get a bit more liquid in there so it's more of a chili consistency. That said, there's NO disappointment in how this recipe turned out!

Winner winner chicken dinner! So tasty and easy to make this is going into a regular rotation. I used a can of fire-roasted tomatoes instead of Rotel since my family is not into spicy.

add one cup of water and 5.4 oz of rice to make it thicker

This turned out great. I made this in the instant pot, pressure cook the chicken with some chicken stock first and use a hand mixer to shred. Add the rest of the ingredients and pressure cook one more time.

Extremely easy to make - just throw it all in the slow cooker and leave it to cook. I cooked it on high for 4 hours and served with wholewheat basmati rice and garlic bread. My 3 year old son wasn't a fan but it was enjoyed by the adults.

I added an extra chicken breast which made it too chicken-y and not creamy enough. :(

I pre cooked the chicken no need to put a whole breast in then take it out to shred. So much faster.

I left out the corn and added an extra 1/2 block of cream cheese and it was amazing!

Really good! I used rotel tomatoes instead of regular. That added to the flavor for sure. I also cut back on the cumin so my kids would eat it.

Used Chile powder instead of chili powder to give it more of a kick

So easy to make, had to add some flour because it was a little too soupy but otherwise its a new family favorite.

Was out of black beans so used white beans. Didn't have any green chilies on hand but will use it next time for sure. Added white beans without draining or rinsing. Measured spices with love. Will make again. Also added 4 small chicken breast and could have added another. I also diced up a medium onion and added it first. Really good.

Did it in the insta pot would not slow cook so I pressure cooked it for 15 min and was great, add more spices if u like it spicy, I used a 10 can of tomatoes with chilies in it for a kick

Turned out REALLY good! Doubled the batch and will attempt to freeze. Not sure how it'll do but at least I know it was delicious! Added salt and pepper but other than that, super good as is.

I make this weekly now. We like this best paired with some warm, crusty bread, but tortilla chips work in a pinch. Jalapeños sprinkled on top add the perfect kick for those of us that love living on the spicy side!

I didn’t add the cream cheese until about a half hour before I ate it. I had to let it cook for about eight and a half hours and didn’t want it to separate. It was delicious. Will definitely make again. Perfect to throw together in the morning!

I love that I can just throw it in the crock pot and forget about it for several hours. I added more spices than it called for, and it tastes wonderful. I added about 2 to 3 more cans of everything so it could be enough for my family also.

I always make this in the instant pot instead of a slow cooker. I also double it and use frozen chicken. Just high-pressure cook for 11 min and natural release. Turns out great!

This recipe was delicious. We like to eat it with tortilla chips and put leftovers in a burrito the next day. Super simple and versatile.

So I used a can of creamed corn, tin of tomato and tin of chicken soup, then added some sour cream and chive. And then my cream cheese and spices and used kidney beans because we don't eat kidney beans. It was so good!!!! Kids loved it too. I will be making it again!! Yummy

Cooking: Low for 4 hours, high for 1.5 hours Added shredded mild cheddar and mixed well (it melted with the residual heat) Added chopped green onions and cilantro at the end for some crunch and brightness

This is in our regular rotation. It's great with tortilla chips or just as a chili.

It was good, but more like soup than chilli. Very liquidity.

I think I'll be doubling the corn and the tomatoes. Also I think I'll add the cream cheese later, mine curdled a little bit and made the whole chili taste a little odd. So I did actually put double corn and tomatoes into the chili, and I enjoyed it with a more even ratio. The extra juices didn't affect the flavor, but it did make more. The cream cheese melted really fast after I added it. I waited until the end to throw it in and it didn't really change anything. I also added about 1 and a 1/2 teaspoon of cayenne pepper for a little kick and it added a lot of flavors. This second attempt was much better than the first and I am really happy with it.

Great flavor! Quick and easy to throw together. I used a Tri-Blend bean mix instead of black beans. I think next time I’ll do two cans of beans just because I feel like the ratio to chicken wasn’t enough. And added some tortilla chips on the side

Not the prettiest, but it was really good. My husband thought it was a little too spicy, but I thought it was the perfect amount of spice. I didn’t get a picture before we dug in. After 6 hours the chicken just fell apart it was so tender. I would probably thin it out a touch next time I make it. I loved it.

I added half a yellow onion and 1/4 cup chopped cilantro.

Super easy to make. And does not have to be a slow cook meal if you precook chicken. Great flavor not to spicy and kid friendly.

Easy to make then go about my day. Served with a side of Cool Ranch Doritoes for the kids to scoop, and they LOVED it!!! Edit: I didn't add tomatoes nor cumin and instead of ranch I used Lipton Onion Mix.

This was a crowd pleaser! Added seasoning for everything. Ate with chips or crackers topped with sour cream.

Not good. At all. Was not a chilli consistency because there wasn't enough liquid. Was not creamy. It's basically seasoned, shredded chicken to then put in something, not eat on its own. We tried sprucing it up with tortilla chips and shredded cheese, but there was no hope. The flavor was horrible as well in my opinion. I suppose if you liked the flavor you could make a few changes to make it creamier and more chilli-like.

Was okay but a bit dry - perhaps I won’t cook for as long next time.
