Whole milk is better but you can experiment with others easily. But butter substitutes don’t work well

◦ Has to be hersheys cocoa
◦ I loose measure everything. No sifting. You can go heavy on the cocoa too for a richer taste but don’t go heavy on the milk
◦ Never halve/double the recipe. It doesn’t turn out
◦ Taste often. At every stage (3) minimum.
◦ You can do other things but I don’t recommend making 2 batches at once
◦ One of your burners will be better than the others. I don’t know why
◦ Salt to taste
◦ Use a wood/bamboo spoon
◦ A bigger pot is better
◦ Switch arms
◦ Pb takes about an hour from start to pouring into pan
◦ Drink a lot of water
◦ Remove from heat after butter melts
