The texture of these is fantastic - firm and meatlike. They hold up very well in wedding soup! I'm going to try and improve the flavor by adding more seasoning (nutmeg, cinnamon, bouillon cube) and maybe fresh mushrooms and apple and canned carrot next time. This recipe has great potential! For now, I am hiding the bland flavor in flavorful lentil wedding soup.
