Vegan Gluten-Free Copycat HUVUDROLL, IKEA's Plant Balls

IKEA's plant balls, known as HUVUDROLL, are crafted from pea protein, oats, potatoes, onions, and apples, aiming to replicate the taste and texture of traditional meatballs. HUVUDROLL original ingredients: Pea protein, Water, Vegetable oil, Potatoes, Binding mixes (crumbs [rice flour, dextrose (maize), salt, mono and diglycerides, pea starch, pea protein], methyl-cellulose), Onion, Oat bran, Natural flavouring, Mushroom concentrate, Dried apple, Salt, Tomato powder, Premix vitamins and minerals, Black pepper, Allspice. Contains: Oat.

Instructions

Step 1
Wash and peel 3 potatoes. Chop up and boil in a pot until soft. Mash with fork and add later to big mixing bowl. In the meantime, if using fresh apple or mushrooms, peel the apple and dice up apple and mushrooms. Saute in some olive oil until soft. Let cool and add to food processor later, if using.
Step 2
For the meatballs, add 3 1/4 cups pea quinoa protein powder to a big mixing bowl. I used a whole 12.7oz / 360g bag of the Better Body Foods brand. Can sub a combo of pea protein powder and quinoa flour (2 cups pea protein, 1 1/4 cup quinoa flour?). Add rice flour, seasonings, and dried diced carrot, if using. Add crumbed bouillon cube, if using. Blend pouch of freeze dried apple (1oz / 28g Great Value brand pouch) in food processor and add to bowl. It makes about 3/4 blended cups, in case you want to use homemade dried apple. Mix everything well. Add blended mushrooms and apple, if using. Add mashed potatoes. Add blended canned carrots, if using. Add 2 cups water (may need less water if using fresh apples, mushrooms, and canned carrots). Mix everything well.
Step 3
Preheat oven to 375F / 190c. Set up 2 baking sheets lined with parchment paper. Using a heaping Tbsp per meatball, form meatballs with hands. This recipe makes 73 small plant meatballs, or 18 servings (4 meatballs per serving). Bake meatballs at 375F / 190c for 40 min. I get about 4 meals worth of meatballs from this, with a few extra, and freeze them for wedding soup making (16 balls per pot) or eating as is.
