Absolutely delicious the green sauce was amazing. I added some button mushrooms. I doubled up on the green dressing because I love it and it’s super versatile.
If you use a couple of extra sweet potatoes you’ll have enough to turn it into a soup. Just use leftover mash, add a tin of chopped tomatoes, some spices (I used turmeric and smoked paprika) some vegetable or chicken stock, some milk or cream and blitz. Serve it with a dollop of natural yogurt and and a big spoon of the green dressing, both of which cut through the sweetness of the potato. 👌🏼
