Followed suggestions in comments:
- Used 2 C veg broth instead of 3C water
- Used a can of fire roasted tomatoes instead of plum tomatoes
- doubled the garam masala and also added a tsp of hot curry to the shrimp.
- probably used closer to a pound of shrimp.
Good with the coconut milk but could probably forego it bc now what to do with the rest of the can?
