I love crockpot "baked potato" soups, and this was just a twist on those. After having delicious Kartoffelsuppe at a German restaurant, the search was on! I came across this recipe from Food.com and ended up tweaking it a little.
You can add extra salt, more or less sour cream, whatever works for you.
