This was easy and very good! I had to sub sliced pork as I didn't have chicken thawed, but it made a really good, filling dinner. Raves from my husband and 14 year old, which is great! I topped it with homemade hot salsa, nonfat Greek yogurt instead of sour cream, fresh cilantro and lime. Totally making this one again!
ETA I used a homemade fajita seasoning and added chili powder to the rice.
