This was shockingly easy to cook for how tasty it was! I didn't really feel I needed to cook the mushrooms separately so saved time there. Uses only one pan and one baking tray. Minimal seasoning so barely any time spent on that. Lovely ingredients, all the things I love eating in the colder months. I'd like to try it with smoked tofu instead of goats cheese for a vegan version, and can already imagine a version with mozzarella and roasted pepper in the summer...
