I've been working on getting back to healthier eating, and this was a perfect, simple recipe for making ahead of time for lunches. I added it to some leftover quinoa I had in the fridge. This will definitely be added to my meal prep rotation. Also, I love that you can easily adjust the spice level, and it doesn't leave a ton of dishes to clean! (I'm a mom of 4, so that's a huge plus for me)
