All I have to say is GOOD GOD. This is absolutely delicious, filling, and pretty easy weeknight dinner to throw together—not a ton of prep and chopping involved, which is a huge blessing when you’re cooking a lot. I’d add some mushrooms next time and I didn’t have fresh basil to finish it off, but I can tell the basil would really add some brightness. I will probably be making this weekly for the foreseeable future!
