Definitely making again.
I used some leftover shredded chicken that was already slow cooked and seasoned for tacos. So I just made this in a pot on the stove.
Since I used the leftover chicken I didn't need to cook it again, I started by reducing the salsa in the pot, I used medium spice for some kick since I didn't have jalapeños on hand. Once it was reduced I threw in the leftover chicken and everything else but the cream cheese. I should have not added the seasoning or used less of it since the leftover chicken was already heavily seasoned. But it was still good.
Once everything was nice and hot and simmered together for a bit I added the cream cheese. Once that was combined well, it was done.
Served with a dollop of sour cream, shredded cheddar cheese and some diced onion on top. And with a quesadilla and some chips on the side.
