I didn't have nduja or any other chili paste, so I added a tea spoon of chili flakes and a bit of sriracha, turned out still very spicy, I can't imagine the spiciness of the actual recipe. I also added 4 yolks instead of 3 for this amount of cheese (it wouldn't mix otherwise, too dense) and used grana padano as I didn't have parmesan. Overall despite the changes, this recipe is still a very good base, but I recommend adjusting your spice levels.
