This was delicious, especially 2 days later after freezing the left overs. I doubled the ingredients because I was cooking for 5 people, except I only used 1 can of coconut milk and added some corn flour to thicken, and it was still a perfect consistency. I also added 4 medium potatoes, cut into small cubes (added to the onion after about 5 minutes of frying). I also added some roughly torn spinach in the last 5 minutes or so and served the curry once wilted.
