This was easy, delicious, and kid friendly! I would opt for mild salsas and skip the hot sauce (pretty spicy, even with 2 Tbs). I served this with frozen pre-cooked brown rice from Trader Joes, added black beans (drained) straight from the can, and offered pickled red onions, sliced pineapple, and sliced avocado as toppings. My family loved it!
