This is really good - a very satisfying healthy version of a not so healthy classic.
Of course I made changes, followed instructions for cauliflower, red pepper and onion, 8 oz of Banza Chickpea pasta, 1 pound of hot Italian sausage, browned and drained, 24 oz of Rao's Tomato Basil sauce, 1 1/2 cup of Good whole milk cottage cheese. Mixed all of the above in a large bowl and dumped in 3 baking dishes. (Cooking for 2). Topped with 1/2 cup shredded Mozzarella - that was more than needed....less next time). Takes a little time but 2 delicious meals in the freezer!
Makes six generous servings (594 cal, 39g pro, 37g fat, 37g carbs, 9g fiber).
