I made it with ground chicken (needed to use it) and fettuccine noodles because I didn't have the correct rice noodles. Despite those changes, it was a big hit, easier to make than most Thai/Thai inspired recipes, but still with a great flavor profile. It eill be added to the rotation of favorites at my house.
