Used a couple of onions and garlic bulbs instead of just one. I also used vegetable stock instead of chicken and added a bit of oregano. Turned out lovely.
Also, I'd recommend to just eyeball the stock/cream ratios, and add it slowly until you get a nice consistency. It's easier to make it thinner than the other way around 🤷♂️
