This was a surprise hit with the family. I only chose it because I read a book with a lentil curry mentioned in it, and thought it sounded good, and this was the recipe I scoped out.
It's a delicious dish, with a rich flavour. The family claimed they'd love it hotter (they added cayenne after serving) but I thought it was just fine as it is!
I did increase the amount of lentils because I wasn't sure it would feed four adults otherwise - a wise choice which only left a little in the way of leftovers. I used two serranos, and the dried turmeric, and due to tree nut allergies I switched the almond butter for peanut butter - which was actually delicious! I had to use parsley instead of cilantro (I was out), but it turned out fine- I followed the rest of the recipe as written and will definitely make again.
