So good. Used a plant based pork, so kind of tweaked some things. Made the broth separate and cooked for way less time and just broiled the fake pork with drizzled hot honey. Also cooked the noodles separate and served the pork and broth over them. Subbed shiitake mushrooms as it was what I had and added water chestnuts. Also, the candied jalapeños were delicious and I am obsessed with them.
