First, I added shredded carrots in the same proportion as celery. Then heated the carrots in some avacado oil for 2 min, then added the celery for 2 min, then the ham for 2 min, then the onion for 2 min and added 2t of minced garlic. Added 1t of Italian seasoning, 1t of thyme, 3 bay leaves, 1/8t of red pepper flakes (use 1/4t next time). Then started following the directions with adding the broth and potatoes. When soup was done, added 2T of parsley. Garnished servings with shredded cheese and green onion. Husband loved it.
