Easy and Comforting Ham and Potato Soup

First, I added shredded carrots in the same proportion as celery. Then heated the carrots in some avacado oil for 2 min, then added the celery for 2 min, then the ham for 2 min, then the onion for 2 min and added 2t of minced garlic. Added 1t of Italian seasoning, 1t of thyme, 3 bay leaves, 1/8t of red pepper flakes (use 1/4t next time). Then started following the directions with adding the broth and potatoes. When soup was done, added 2T of parsley. Garnished servings with shredded cheese and green onion. Husband loved it.

Felt like it was missing just a little bit of something spice-wise. I would half or fourth the butter because it was too much. Add more potatoes too

Added some Tastefully Simple Rustic Hetb seasoning

Nice use for leftover ham. Added garlic and parsley to it.

We love potatoes in our family, so we made sure to add a little extra which I definitely recommend! Plus the crunch of the carrots and celery makes this soup so much more delicious and filling 😊

Absolutely lovely! Sadly, I didn't add enough potatoes but I could not fault the taste it was bursting with flavour, I've never made a soup before, so this was a first and I will 100% be making this again for the family.
