I've found that using a nonstick pan with cooking spray over medium-high heat is crucial to making light, wispy crepes, but your mileage may vary. It's absolutely delicious, but you don't have to restrict yourself to berries, if berries aren't your jam (pun intended). Stone fruits work, too, and I've made it with apples when the mood strikes. Defrosted frozen works, too, and maybe better. Basically, if you would eat it with dairy, you can put it in there. That said, my favorite will always be a berry mix. One bite evokes those first glorious days of summer, and with frozen fruit available all year, you can get a mini vacation in January, if you want.
