I actually prefer crumbled feta in this, as it distributes that briny feta through every bite, but preferences vary. The quality of the olive oil will make or break this. Go with something you would drink on a spoon. I like the vegetal flavor of olives, so I go with the least processed olive oil I can find, but with all those flavors going on, it's hard to go wrong no matter what you choose. If you're a gardener, fresh oregano in place of dried is wonderful, but work with what you have. Dried oregano will still give you those summertime vibes, and cherry tomatoes are available all year long and make a great substitute when vine ripened tomatoes aren't in season.
