This was our final meal using a family pack of ground pork I bought last week. I am shocked at how I was able to stretch it out to 3 meals. ( #1 . Copycat Sausage and Egg McMuffins, #2 . Keto Big Mac Casserole & #3 . Baked Greek Meatballs ๐ ๐ ๐)
It was a very busy action-packed "short" week, we were too tired to cook, too tired to eat out at our favourite pub.
But luckily, ingredient prep came to the rescue, I dumped out my potatoes ๐ฅ, marinated those- threw them in the oven...& my partner in crime volunteered to roll the meatballs. (I don't have the best of luck to roll them, & I'm squeamish about touching raw meat.) ๐
40 minutes later we had the perfect bowl topped with Tzatziki and we didn't have to spend another penny because we were too tired to cook. Absolutely delicious!
