Chicken breasts vary in thickness but can all weigh the same. A flat 5oz chicken breast buttuflied can hold more. A 5oz one that is thick but rounded I use the accordion cut. Forgot to say a large chicken breast is usually considered around 8oz so half a pound. Three would be a full pound and a half. If you got the average ones that are 5-6oz yeah you would end up with a lot extra
