I made this for my wife, mother, and mother in law for mothers day, prepping it the night before wa perfect and helped it come out great, I used prosciutto as a sub for ham it came out great would definitely make this again. I recommend letting the egg yolks sit a bit so they can get to room temp first before blending the down and listen to the adding butter slowly cause I kinda didn't but the sauce came out fine.
