Honking Sweet Potato Mushroom Hash
I've never seen a sweet potato so big! 😆 I put it to good use. I just made this for either breakfast, lunch or dinner. But mostly for a breakfast for M.
I didn't have sausage so put 🍄 in it. Plus, 🥕🫑🥦🧄🧅🍠 & kale! Veggie packed & smells wonderful! Can't wait for breakfast tomorrow. 🤩
