I used a shallot, yellow squash & fresh garlic. I added red & pablano peppers, celery, 1/4 teaspoon each of thyme, sage, red pepper & a splash of white wine. I also added fresh mushrooms & an apple for sweetness. It needed a bit more seasoning so I added capers, fresh basil & parsley. Great weeknight dinner! I served it with brown rice & will add this to our dinner rotation.
