Nice! Unlike whole milk, evaporated milk doesn't split when you boil it, so no curdled sauce. It isn't going to replace my usual beef stroganoff with the tenderloin trimmings, but it is going to replace my old "hamburger helper" recipe. I kept the mushroom, onion, and evaporated milk quantities the same, because using a single unit of something is easier than figuring out how to use the rest of the container without waste, but I did halve the beef, noodles, and sour cream, and used a 15 ounce can of broth. I'm cooking for two, so that works out to one bigger dinner portion, one small dinner portion, and one good sized lunch the next day.
