This was so good! The first time I made it the tortillas did not get crispy enough. The second time I fully fried the tortillas, set them aside, and barely mixed them in right before adding the cheese. That came out much better and crisp. But anyway, the chips mixed with the eggs cheese tomatoes onion and jalapeños was so good! It’s a great texture balance. I added half the jalapeño because I was afraid it would be too spicy, but I could barely taste it. Next time I’m adding the full amount. And the salsa on top is a nice acidic flavorful touch. Yum.
