These Italian Stuffed Zucchini's were easy, fast & yummy!
Prep work ahead of time is key!
I had a huge container of Bruschetta to use up & I thought it would be perfect shortcut for these. I didn't use Italian seasoning, or salt & pepper in case it would be over seasoned.
Unfortunately, my basil was not usable- I'm quite disappointed in that because I just bought it the other day- & it was moldy.
Other than that, this is a fantastic meal- my partner was grateful because it's low carb. My son gave it an honest 8/10. I'm so pleased this worked out!
