Start your rice.
Drain, dry, dice and marinade the tofu. Set aside to soak in the soy sauce.
Cook the onion in a large skillet. Add the spices to brown them slightly. Add a can of diced tomatoes. Lightly cook the spinach. Transfer all of it to a blender. Blend it smooth. Add the cream and ginger to the blender. Blend gently. Taste and adjust seasoning to your liking. Let it sit in the blender.
In the same skillet, brown the tofu.
Pour the spinach over the tofu. Serve over rice.
